Ingredients

1 small (100g) red onion, chopped coarsely
1 medium (120g) carrot, chopped coarsely
1 small (150g) capsicum, chopped coarsely
50g baby spinach leaves, shredded finely
6 eggs
1 cup (150g) self-raising flour
¼ (60ml) cup vegetable oil
200g short cut rindless bacon, finely diced
1 ½ cups (180g) grated cheddar cheese
Pinch of salt
Pinch of freshly ground pepper

Method

  1. Preheat the oven to 180*C (160*C fan-forced).  Grease a 20x30cm slice dish and line base with Glad® Bake & Cooking® Paper.
  2. Place onion, carrot and capsicum into the bowl of a food processor and process until vegetables are of a grated consistency (you can also grate with a cheese grater).
  3. Whisk the eggs and flour in a large bowl until combined. Season with salt and freshly ground pepper. Add all the vegetables, bacon, cheese and oil; stir until combined.
  4. Pour into the prepared pan and bake for 25 minutes or until set.
  5. Cool in the dish and cut with a sharp knife into 12 pieces.

Tips

Suitable to freeze, use GLAD® Go-Between to separate pieces and store in a GLAD® SNAP LOCK® Bag.
