Butterflied Prawns

Ingredients
20 large (1.4kg) uncooked prawns
¼ cup (60ml) olive oil
½ teaspoon sweet paprika
2 cloves garlic, crushed
1 long red chilli, chopped finely
2 tablespoons fresh oregano leaves
1 teaspoon sugar
2 teaspoons grated lemon rind
1 tablespoon lemon juice
1 baby cos lettuce, to serve
1 lime, halved, to serve

Method
- Peel the prawns, leaving tails intact. To butterfly the prawns, cut halfway through the back, remove intestinal tract and press flat.
- Combine the olive oil, paprika, garlic, chilli, oregano, sugar, lemon rind and juice in a GLAD® Snap Lock® Bag. Add prawns; seal GLAD® Snap Lock® Bag and combine prawns in oil mixture. Refrigerate for 1 hour.
- Drain prawns from oil mixture. Cook the prawns in a single layer on a heated barbecue plate, over high heat, for about 1-2minutes each side until just cooked through. Cover in GLAD® Foil to keep warm.
- Season prawns with salt and freshly ground black pepper and serve with baby Cos lettuce leaves and lime halves, if desired.
