Lamb Chops with Garlic Mayonnaise
Serve: 4 Cooking
time: 2hr 30min Ingredients:
6 tbsp olive oil 2 cloves garlic, minced 2 tbsp minced parsley 1 tbsp chopped fresh thyme or 1/2 tsp dried thyme 11/2 tbsp lemon juice 12 lamb rib chops, each 1/2 in/2 cm salt and freshly ground pepper Quick Aioli 3/4 cup mayonnaise 1 tbsp extra-virgin olive oil 4 cloves garlic, or to taste, mashed through a garlic press 1 tbsp lemon juice 1 tsp mustard powder
Method:
1 In a shallow bowl, mix together the oil, minced garlic, parsley, thyme, and lemon juice. Add the chops and coat well. Cover and refrigerate for at least 2 hours.
2 To make the quick aioli, whisk all the ingredients together in a small bowl.
3 Transfer to a serving bowl.
4 Drain the chops, reserving the marinade. Cook in an electric fry pan lined with Glad Bake & Cooking Paper or bake in a moderate over for 35 minutes on a Glad Roasting Pan, basting occasionally with marinade, until browned and cooked to your taste. Season with salt and pepper.
Serve with the aioli.
