Warm Potato Salad
Prep time: 10 minutes Cooking time: About 15 minutes
Boil chat potatoes until tender, and drain. (Time will depend on size.)
Combine sour cream, mayonnaise, mustard and lemon juice and combine. Fold through herbs and peas.
Cut warm potatoes into quarters if small, sixths if medium, and stir into dressing.
This can be served warm or a room temperature but should not be chilled as the dressing will seize.
- 12 small or 8 medium chat potatoes (about 600g)
- ½ cup sour cream
- ½ cup good quality whole egg mayonnaise (home made or a brand
- such as S&W)
- ½ tbsp whole grain mustard
- Juice ½ lemon
- ¾ cup frozen baby peas, cooked to packet directions
- ¼ cup dill, chopped
- ¼ cup shallots (green spring onions), finely sliced
